I could literally eat guacamole every day. I don't. But I totally could. I love it on toast, I love it on chips, I love it with vegetables, I love it on a spoon!
I almost feel silly posting a recipe for it because it is SO easy to make. Which makes this a great recipe to get young kids involved with. Let them mash away!
Here's the guacamole segment from a 3 part video my son and I made for the Danbury Farmers' Market. He definitely inherited my "I love avocado" gene, haha.
I like to serve guacamole with homemade chips and salsa, with tacos, with veggie or turkey burgers, with frittata's, or with anything.
It literally tastes good with anything!

Quick and Easy Guacamole
Vegan, Nut free, Soy free, Kid friendly

Prep time: 5 minutes
Cooking time: 8-10 minutes
Yield: 6-8 servings _________________________________________
Ingredients:
2 small ripe avocados
1 teaspoon lime juice
2 tablespoons salsa
½ teaspoon salt
Directions:
Cut the avocados in half and remove the pit. Scoop out the flesh into a small bowl.
Mash with a fork or muddler, leaving about ⅓ chunky.
Add the salsa, lime juice and salt, and mix well with a spoon.
Taste and adjust salt and lime juice to taste. Garnish with fresh cilantro leaves if desired.
Enjoy with homemade pita chips and salsa, or just as-is!!
