Working in a French restaurant, I've definitely made my fair share of Kir Royale's. The French 75 is a drink that I've started seeing more of recently, than I had in the past.
In France, it is common to enjoy an aperitif with some light snacks, and Ludo and I thought it would be fun to share a couple French aperitifs! Let us know in the comments if there are other drinks you might like to see.
We experimented by adding vanilla to the French 75 instead of simple syrup (to reduce the sugar), and it ended up tasting great! And for the Kir, to reduce calories and sweetness, we use less of the cassis. Delicious every time!

Kir Royale

Prep time: <1 minute
Yield: 1 drink _________________________________________
Ingredients:
1/3 oz. crème de cassis
4-5 oz. sparkling wine (to fill the glass)
Garnish options: fresh raspberry or blackberry
Directions:
Pour the crème de cassis into a chilled champagne glass.
Top off the glass with sparkling wine.
Enjoy!

Ingredients:
1 - 1 ½ oz gin
½ oz citrus juice (either all lemon, or 2 parts lemon to 1 part lime)*
A few dashes of vanilla or simple syrup (simple syrup is 1 part water to 1 part sugar)*
2-3 oz. sparkling wine
Lemon twist for garnish
Directions:
Add gin, citrus juice, and vanilla (or simple syrup) to a chilled champagne glass.
Shake well.
Top off with sparkling wine, and garnish with a lemon twist.
